Labra – mixed vegetable dish

Labra - mixed vegetable dish

mins Serves: 2-3
Ingredients
- 2tbs mustard oil
- 1/2 tsp sugar
- 1 bay leaf
- 3tbs minced ginger
- 1/2 tsp turmeric
- 2 tsp ground cumin
- Salt as per taste
- 3/4 cup chopped tomatoes
- 2cup water
- 1/2 cup cubed potatoes
- 1 cup peeled and cubed sweet potato
- 2cup cauliflower, cut into floret
- 1cup sliced green beans
- 2 cup cubed eggplant (brinjal)
- 3tbs red chilli paste
- 1/4 cup cooked green peas
- 1/2 tsp garam masala
Directions
- Heat oil and add sugar.
- Fry for a few seconds.
- Lower heat and add bay leaf.
- Sauté for a few seconds and add ginger, turmeric, cumin and salt to it.
- Add tomatoes, potatoes, sweet potatoes and water.
- Cover and simmer for 15 minutes.
- Add cauliflower, beans, eggplant and red chilli paste.
- Simmer till done.
- Sprinkle some hot water for thick gravy.
- Add peas, mix well and simmer for a while.
- Remove from heat and sprinkle garam masala and serve hot.
